During the course, participants will be introduced to the basics of fermentation, then together we will prepare a batch of vegan kimchi, which everyone can flavour to their own taste and take home.

The most famous fermented food in Korean cuisine. The meaning of its name: submerged vegetables. In Korea alone, there are thousands of variations. Its origins go back to ancient times, with the first mention of it dating back to 54 BC. In the last few decades, it has embarked on a global tour of conquest, and now you can find different kimchi all over the world, reflecting local customs and ingredients.

The main ingredient is Chinese kale. Other ingredients include chillies, ginger, garlic, ice crackers, soy sauce, seaweed, fish sauce, baby octopus, live shrimp, carrots, oyster sauce, spring onions and many more.

Registration is required to participate. Please bring two sealable jars of at least half a litre capacity, a kitchen apron and a knife.
