Fermentation, sustainability, healthy food. The concept of fermentation hardly needs to be explained to our guests who are experienced in top gastronomy.
We invited Fruzsina Farkas, an independent expert known as a green sommelier, to collaborate on this special and yet healthy dinner concept.
Head chef Dániel Singlár and executive chef Áron Kelemen have created a five-course menu for this evening with an emphasis on seasonality. Fruzsina makes the fermented juices, while our sommelier, Dániel Grezsu, pairs a carefully selected range of natural wines to the plates.
