Kimchi making - Lasting winter

During the course, participants will be introduced to the basics of fermentation, then together we will make a big batch of kimchi, which everyone can taste and take home.

Kimchi (김치) is the best-known fermented dish in Korean cuisine. The meaning of its name: submerged vegetables. In Korea alone, there are thousands of variations. Its origin dates back to ancient times, with the first mention of it dating back to 54 BC. In the last few decades, it has embarked on a global tour of conquest, and now you can find different kimchi all over the world, reflecting local customs and ingredients.
The main ingredient is Chinese kale. Other ingredients include chillies, ginger, garlic, ice crackers, soy sauce, seaweed, fish sauce, baby octopus, live shrimp, carrots, oyster sauce, spring onions and many more.
Please bring two jars, at least half a litre in size, with a tight seal, a kitchen apron and a sharp knife.
