The most famous fermented food in Korean cuisine. The meaning of its name: submerged vegetables. In Korea alone, there are thousands of variations. Its origins go back to ancient times, with the first mention of it dating back to 54 BC. In the last few decades, it has embarked on a global tour of conquest, and now you can find different kimchi all over the world, reflecting local customs and ingredients.
The main ingredient is Chinese kale. Other ingredients include chillies, ginger, garlic, ice crackers, soy sauce, seaweed, fish sauce, baby octopus, live shrimp, carrots, oyster sauce, spring onions and many more.
During the course, participants will learn the basics of fermentation, then together we'll make a batch of vegan kimchi for everyone to flavour and take home to their own taste. Registration is required. Please bring three jars of at least half a litre, with a sealable lid, and a kitchen apron.
