On September 11, Time Out Market Budapest’s diverse culinary offerings will expand with a new restaurant: the Market’s latest concept arrives under the professional guidance of Michelin-starred chef Ákos Sárközi. Fúzió by Textúra & Borkonyha brings the distinctive cuisines of the two restaurants to the Market in a new, more casual format, where a wider audience can experience the chef’s culinary vision and Hungarian bistro-style dishes.

At the heart of Fúzió’s cuisine lies Hungarian bistro-style cooking, which reflects Ákos Sárközi’s playfulness and creative thinking. The dishes draw on Hungarian culinary traditions while being reimagined with a modern, personal touch. Three signature dishes are being prepared exclusively for the Time Out Market Budapest audience, available only at the Market: Duck Liver with Tokaji Aszú, Pear, and Stangli; Juicy Roast Pork on Brioche with Thyme Sauce; and Apricot Blossom “Rákóczi Túrós.”

Time Out Market Budapest opened its doors to the public on 20 September 2025 on Blaha Lujza Square, inside the iconic Corvin Palace. Time Out Market is the world’s first editorially curated food and cultural market, bringing the best of the city together under one roof: the city’s best chefs, restaurateurs, drinks and cultural experiences. Time Out Market Budapest features eleven culinary concepts, three bars, five event spaces, and around 540 seats.
