A bento is a meal packed into a box that workers rushing to work and Japanese schoolchildren carry in their hands every morning—and it’s guaranteed to be tucked away in the backpack of any day-tripper; you can buy one at the corner store if your day happens to have you on the go or if you don’t have time to go out for lunch. The bento maker takes care to put together balanced, nutritious, and varied dishes that are appealing in both flavor and color.

The contents of the box can be eaten without reheating; they’re selected from foods that are enjoyable whether served hot or cold. With a few simple tricks, you can pack not just food into the box, but also plenty of care, attention, and love. You can shape the food into the box owner’s favorite character, reference a current event, or reflect the changing seasons; once you’ve mastered a few techniques, you can express any thought through your food compositions.

For our bento workshop, we’ve selected dishes from the flavors of everyday Japanese life that are particularly quick to prepare—dishes that will brighten up both your bento boxes and, if you step away from the box format, your family dinner table as well.
