During these exclusive, limited-capacity evenings, guests are invited behind the scenes: personal stories, inspirations, and special dishes are presented—creations that are not available in the Market’s everyday offerings. Throughout the evening, the chefs personally guide guests through the menu, sharing the ideas behind each dish and the story of their restaurant, all within an intimate, private dining experience.

May 21: 101 Bistro

The 101 Chef’s Table event is inspired by the restaurant’s latest culinary collection, Back to the Roots. In this spirit, we invite our guests on a Northern Chinese culinary journey, to the region where Lu Boen, co-owner of the 101 restaurants, originates.

Northern Chinese cuisine is based primarily on wheat, which is why noodles, dumplings, and various types of flatbreads appear more frequently than rice. Classic dishes include jiaozi (stuffed dumplings), hand-pulled noodles, as well as a wide variety of steamed and fried dough-based dishes. The flavor profile is typically bolder and saltier, with frequent use of garlic, onion, vinegar, and soy sauce.

Due to the colder climate, dishes tend to be heartier and more filling: meat stews, braised dishes, roasted meats, and pickled or fermented vegetables are all common. One of the most iconic dishes of Northern cuisine is Peking duck, which naturally will also be featured on the evening’s menu.

The aim of the event is to bring Northern Chinese culture closer to our guests through flavors and through the personal stories of Lu Boen.
